How long do babies sleep at 7 weeks (one week adjusted)?

My DD is seven weeks, one week adjusted. She eats about every 3-4 hours and spends the time between feedings asleep. Sometimes she won't even fully wake up to eat, she will wake up a little and as soon as she starts eating she closes her eyes to go to sleep, although she continues to eat with her eyes closed. She does has digestive issues that keep her awake for an hour or two every night, so I wonder if that just tires her out for the whole day?

It is COMPLETELY normal for preemies to sleep all the time! It's actually a really good thing, because babies only grow when they are sleeping.

 She'll probably start waking up more over the next month or 2.

Mine are 5 weeks so they're still a little younger than yours but they sleep all day too.  I feed them, they sleep, and then we wait for them to wake up to eat again.  It's like that all day every day.
