Freezer Dinners!

Hello All!  I am rounding 39 weeks in a few days, and although Im getting a little late start, I need to start freezing some meals so we have things ready for the chaos that will be our lives soon!  Anyone have easy to freeze meal ideas?  On my list, I just have chili, spaghetti sauce and meatballs, and chicken tortilla soup.  Thanks in advance!

  • You can freeze pretty much anything you want! I'm going to make pancakes, muffins, waffles, tator tot casserole, baked ziti, meatloaf, soups, lasagna, chicken parmesan, enchiladas, breads, cookies, etc.

  • Stuffed peppers freeze really well. I'm making a boatload of Lasagna because that is one of our favorite dishes. I also made BBQ Chicken for sandwiches. You can also just buy a package of burgers, and keep the buns in the freezer too. We also have a large package of Plain Fish Fillets. I also made fruit cups for snacks (orange juice, peaches, mandarin oranges, strawberries) and breakfast burritos, that I failed at my first attempt by not folding in the edges. They were rock hard.

  • Casseroles saved my life with my first son.  Other things can be frozen, of course, but then they may still require some prep.  Casseroles just get popped in the oven!  I even made breakfast casserole and we had that some mornings (and evenings... truthfully).    I usually make my casseroles from memory so I don't have recipes to share but I would recommend checking out pinterest and searching casseroles.  Pinterest is FABULOUS for quick, easy recipes.  And, I am telling you, do not feel bad to buy a few prepackaged lasagnas and/or frozen pizzas.  There is no shame in that on a crazy evening. : )

    For your casseroles did you just assemble them and then freeze? Or did you assemble..bake..then freeze?? Because I LOVE casseroles on busy nights! So I am sure I will love them even more once our bundle of love arrives :) 

  • I made 3 dozen englih muffin pizzas today for the freezer, I figure it's t re least a quick and easy lunch option and they were cheap and easy. THis weekendni hope to do a few casseroles as well as a few crock pot ready meals. DH will help with meals as well but it's nice to have things ready.

    When you freeze a casserole you prepare it up until the point that you would put it in the oven to bake it. Freeze it, and then when you're ready to make it, you just bake it at what you would have ordinarily. Does that make sense?

  • Ugh, I desperately need to start doing this. I went grocery shopping (like MAJOR shopping) last weekened. I plan on going again this weekend to just get some things that I forgot, etc. Sunday I am hoping to cook, but I honestly have NO clue what to cook.

  • onceamonthmom.com has awesome meal plans to help with once a month cooking. I'm planning to follow their recipes to get our freezer stocked and then supplement as I see fit beyond that.
