I've been having DS wear a onesie and pjs( usually a fleecy sleepsack) and then swaddling him, wondering if I should skip
The sleepsack since he's swaddled.

Put as many layers on baby as you would be comfy in temp wise. I usually put onsie and pjs and the sleep sack or swaddle. I don't always put the onse under the pj's b/c sometimes it is not that cold. I just try to think about how many layers I would be comfy in.

At night, we put him in a sleep n play and swaddle him with a medium/light blanket. He makes us leave his arms out though so it's really only a 1/2 swaddle. I was swaddling him with a heavier blanket but he felt kind of warm and was fussing a lot.
In the day, it's whatever he's wearing (usually a long sleeve onesie, socks and pants) plus the same swaddle.
I use a night gown on LO and a fleecy halo sleep sack with swaddle attachment. It's so much easier to change a diaper in the middle of the night then dealing with a onesie and pjs
