I could possibly change it ten times but I really, really love the name Scarlett ... any advice for middle names? Im thinking classic and feminine....

I like that , Jane goes well with it. I am trying to play with the spelling... idk if I like "Scarlett" or Scarlette" better. For some reason the extra "e" makes a big difference to me

Scarlett is nice, I'd go with a simpler/plainer/vanilla-er middle name, defnitely something feminine.  Like PPs suggestion of Jane.  Also, Ann, Grace, Katherine, Elizabeth, Mary, Elaine Elise, Elinor, Lynn etc.  I'd avoid another word name for sure.
