PUMPKIN COOKIES
Ingredients:
2 cups flour
1 cup quick oatmeal
1 teaspoon baking powder
1 teaspoon cinnamon
? teaspoon salt
1 cup butter softened (2 sticks)
1 cup brown sugar
1 cup sugar
1 egg slightly beaten
1 teaspoon vanilla
1 cup canned pumpkin pie filling
1 ?cups chocolate, white chocolate, and butterscotch chips
Directions:
Preheat oven to 350 degrees
Combine flour, oats, baking powder, cinnamon and salt.Cream butter, gradually adding sugars beating until light and fluffy.Add egg and vanilla, mix well.Add pumpkin, mixing well.Stir in morsels.For each cookie, use ? measuring cup to drop dough onto slightly greased cookie sheet.Bake 25 minutes and cool.Makes 20 cookies.
