freezing sweet potato chunks?

Has anyone done this?  My LO is eating more finger foods and I'd like to freeze some  I'm not sure if I should freeze slices or chunks, cook it completely, par-boil it or freeze it raw. . . Any thoughts or ideas?  TIA!

  • I did sweet potato fries. Cut into sticks (or chunks) toss very lightly with olive oil,and bake. They don't really crisp up this way, but hold their shape well for LO to pick up easily. Freeze in a single layer on a plate or pan, then transfer to ziploc bag. Good for up to 3 months in freezer.

    And when you defrost them do you do it by leaving them out until they reach room temperature,or do you microwave them?

    Thanks for the response.  I have the same questions. 

  • whatever you do- DON'T FREEZE THEM RAW!  i did this last week and they were super gross.  it completely changed the taste of them to super starchy and they were so nasty dh and i couldn't even eat a bite of them.
