I've been lurking for awhile. My son was 2 in June, he has a severe expressive speech delay. He only says dada (dad). He has on rare occasions said other words (ball, mom, garbage, corn, turtle) never to repeat them again. He is in special ed preschool one hour a week, and his teacher does a home visit one hour a week. So my question is, if you do the GFCF diet, what do you replace milk/cheese with? My son loves his cheese and I can't imagine taking it from him! Also with the milk, he doesn't really like it, but he needs the calories and fat from it still. We are strongly considering doing it but I want to have replacements for his favorites first. Thanks!

I am by NO MEANS an expert on this issue.... but I was asking similar questions a few days ago on here (look down a few posts). One of the ladies sent me these links. I found Silk (choc & reg) at Whole Foods that my son liked just fine. As far as cheese, we haven't looked yet. Maybe you'll find something in these links.
Hi! First off, I will tell you that cheese is pretty much gone on a GFCF diet. There is a Vegan Gourmet Mozzarella and also chedder that melts for on "pizza". It's alright but not the best. There is also "cheese slices" but they do not melt. They are vegan too. I can't remember the name. They're in a purple pack.
Milk, we use almond breeze, rice milk or potato milk (it's a powder). You can use soy but there is some controversy whether too much soy can cause a reaction similar to the milk protein.
I will tell you that your son might not like something as much as you think he does. It may be he's getting the "high" from it and therefore his body craves it like a drug.
Hope this helps. If you have more questions I can try to help. We have been doing the diet for our son since Nov 2007. Or you can email if you want. [email protected]
