How do you prepare fish?

I got some nice perch for dinner and I am just trying to think of how to do it. Cornmeal? Seasoned flour? Potato crusted?

  • Homemade breadcrumbs after I dredge in floor/egg. But generally I prepare fish by opening up the Costco bag and dumping the fish sticks on a cookie sheet.  Stick out tongue

    I often do the same thing, which is why I thought fresh might be nice.

  • I usually baste with melted butter and season generously with Emeril's original essence or Chef Paul Prudhomme's Blackened Redfish magic.

    Substitute the chicken for fish.  delish!

    We usually broil or grill with butter and lemon. I ended up dusting with flour mixed with Old Bay and pan sauteeing.

    It was OK, but I need to find a better fish source around here. I can't drive in to the West Side Market (25 miles) every time I want really fresh fish. The perch was from the local grocery store and was very blah.
