Homemade breadcrumbs after I dredge in floor/egg. But generally I prepare fish by opening up the Costco bag and dumping the fish sticks on a cookie sheet.
I love most fish and will steam or bbq with lemon (or any citrus really) coarse salt and pepper.
We usually broil or grill with butter and lemon. I ended up dusting with flour mixed with Old Bay and pan sauteeing.
It was OK, but I need to find a better fish source around here. I can't drive in to the West Side Market (25 miles) every time I want really fresh fish. The perch was from the local grocery store and was very blah.
