NPR---Cooking Advice (late Turkey Day!)

We're doing a bit of a delayed Thanksgiving/kick off Christmas meal tomorrow.

I haven't been feeling the best in the morning hours and don't feel like working my butt off to get everything together in the morning. We're eating around noon.

I'm wondering how many things I can mix together and refrigerate overnight.

DH is handling the turkey (Thank God!).
Otherwise we're having scalloped corn, green bean casserole, and sweet potato casserole. Bad idea to make them and bake them in the morning?

I'm also thinking of mashed potatoes...is it okay to cut them up and soak them in water so I can boil and mash tomorrow?

I'm also thinking of stuffing...but imagine that won't refrigerate well?

Advice from hosting pros???

  • I think you could get away with doing a lot of those things and then reheating them in the morning. If you do the green bean casserole just wait to put the onions on top untiil you're ready to serve it so they stay crunchy. My mom did this for thanksgiving because I usually split cooking everything with her but this year she didn't want to wear me out and did it all herself and everything turned out great!
