Caramel sauce help ASAP (not IF related)

I'm attempting to make a caramel apple pie per Dh's request for the first time.  I have never caramelized auger before and it is not going well.  I have attempted three times.  The first time, I stired constantly following the recipe.  Then I watched the video on food network.com that goes along with the recipe and Tyler didn't stir constantly in the video, so I didnt stir.  I also tried following instructions for making caramel on the net.   Each time, the water all disappears in the pan before the sugar turns brown.  Then the sugar just dries out and sticks together.  Any caramel making experts out there have any advice?

can you try adding more water?

adjust temp of burner?  maybe try double burner?

I added more water last time. I'm currently trying round 4 with a different pan.  If this doesnt work, perhaps double boiler is next.

Maybe start off with lower the heat until the sugar dissolves and then raise it up to caramelize the sugar? A dbl boiler won't be hot enough. And a pot with a quality bottom helps loads.

I'm normally a lurker here, but just made some caramel for salted caramel mochas

I didn't use water at all.  Here's my recipe:  1/2 C sugar- med/low to med heat until it all melts.  I stir it every once in a while.  If it starts to get really lumpy, turn it down a bit.  

Once it is melted and begins to turn a nice amber color, add 3tbs cubed butter.  Stir this in until melted.  Turn down to low if it seems to bubbly. 

Once butter is melted in and smooth, add 1/2 cup cream and whisk until it is smooth.  

At that point, you're done!

Thanks ladies.  After trying several methods and suggestions, I ended up just adding the other ingredients to the sugar water mixture.  The pie is resting now, so I'll see how it tastes a little later.  I'll have to try making caramel again some other time.

Looks good! I need to use up some apples before we leave, but I am too lazy for this, will probaly just do a crumble.

When we cut into it, the pie was a watery mess. It looked nothing like the picture probably because it was red and not caramelly.  Dh said it was good though.  

I just made apple crisp a week or so ago, which is always awesome, but was trying something new and Dh suggested this recipe.  I will have to try mastering caramel sauce before attempting this pie again.... Or just buy premade caramel as some reviews suggest.
