Freezer meals for after labor....

I plan on making a bunch of stuff so we can eat good food with little effort after LO gets here.  I plan on making chicken pot pie, enchiladas, spaghetti sauce, chili, alfredo sauce, chicken corn chowder, chicken chili, lasagna and maybe more.  What are y'all making ahead of time?  Would love to hear more inspiration! :)

PS- I also made a list of "easy meals" that I can do in between.

  • Here are the resources I've been using:

So far I made a tray of shredded crockpot salsa chicken, baked ziti (tonight actually haha), pesto chicken pasta, and a chicken soup. I've been making larger meals if it freezes well and freezing half in the containers from the first link I posted (the Glad freezer to oven dishes). I still plan to make enchiladas, waffles, a pot roast, and a few other dishes.  I started a "freezer friendly" tag in my blog (linked below) as well with the things I made so far for the baby.

  • A friend of mine told me to do this and I thought it was a great idea! The only meals I could come up with for now are meatloaf and stuffed peppers! Hope this helps

  • I'm praying that some of your cooking motivation rubs off on me before this LO arrives. I used to cook all the time and loved it...I haven't had the motivation to cook during this pregnancy. now I'm at the point where I have trouble reaching things in the kitchen. Uggh.

  • I made my first freezer meal tonight, Weight Watchers chicken black bean chili!

I made a post about it on my personal blog, link in siggy. We ate it for dinner tonight too, and it was awesome!
