I don't know about you, but the hardest meal of the day for me is breakfast. Sometimes I wake up full so I don't feel like eating anything. Other times, I'm just too tired and/or lazy to make something creative and yummy.
I had two hard boiled eggs--that was my breakfast.....
I need some inspiration ladies!

This morning I had a piece of toast with a little butter and 2 pieces of low sodium bacon.
Here are some ideas for light breakfasts that I usually do on weekdays:
-banana with a little peanut butter and maybe a drizzle of honey or a piece of toast with peanut butter and banana slices
-a piece of toast with a little strawberry cream cheese and a few slices of banana
-oatmeal
Love this!! I feel like this sometimes too!! Not sure what "breakfast"
I recently tried a new idea for french toast (if you like it).
6 pieces of texas toast
6 large eggs (i dont use all 6 at once, just start with about 3 and add 1 as needed)
milk
cinnamon (to taste)
frosted flakes (smashed to crumbs using a rolling pin and a zip lock bag - put out in a plate for dipping)
butter
Make your egg mixture with milk, eggs and cinnamon. You can leave out the milk if you like. I also add cinnamon to taste (just add however much you like).
Preheat your skillet to medium and put some butter in there and get it all melted.
Grab a piece of texas toast (or regular bread-whatever suits your fancy), dip in the egg mixture - cover both sides generously - then bring it over to the plate of frosted flakes and cover both sides.
Cook on each side until golden brown and crunchy. Be careful not to turn up the heat too high because the FF will burn.
Sprinkle with powdered sugar (if you like) when they are done and cover with maple syrup.
This is super yummy. The frosted flakes give it a sweet crunch on the outside, and it is to die for!

Thanks ladies for these ideas. I might try them tomorrow morning....but most likely will not try them on a work day. (I give myself less than 10 minutes for breakfast--that also includes preparing my lunch for the day).
I'll have to eat more oatmeal, too (easy, quick and filling)

I generally don't eat before work. I'm too groggy in the mornings and food makes me want to chuck. Break is at 9am and I have some sort of granola/cereal bar and a milk then. On the weekends I will make good stuff like bacon and eggs or sausage gravy and biscuits. Today, however, was leftover lasagne and toast LOL!
That Frosted Flake French Toast sounds AHHHHH-MAZING! I've got Honey Bunches of Oats and may try that tomorrow in place of the Frosted Flakes.

I never eat breakfast on work days, but on weekends (esp if DH has the weekend off), I go all out.
One of my fav breakfast meals is Sunny Side Up Stuffing Muffins

It is one of my favorite "go-to" weekend breakfasts... whenever I make them for guests I get the initial
(wait muffins... made of stuffing... weird) but then they always ask for the recipe later. So funny.

It's a meal replacement healthy cereal that has granola bunches in it. DH is making me eat it because I've lost weight and it's better than just having toast. It's the only thing DH eats for breakfast.
