I'm doing a roast chicken for dinner tonight for DH & I and another couple. The chickens at the market were small, so I bought a 4 lb roaster chicken and 2 lbs of bone-in skin on breast.
1. Do I cook all the meat, just the whole roaster, or roaster and 1 breast? Its 4 adults, but DH & guest DH can eat a lot. I'm roasting the chicken in root vegetables and serving bread and almondine green beans.
2. If I cook more than just the roaster, do I still follow the 20 min per pound rule? 4 lb whole roaster + 1 breast (1 lb) = 5 lbs of chicken therefore 1 hr 40 min?

I would say roast it all - it's not like there's a lack of options for the leftovers.
Regarding the cooking time - I would say no. I think the logic behind the 20 min/lb rule has to do with bigger birds being thicker. Since the extra breasts are separate, I think if you cook for long enough to cook the roaster, the breasts will be done around the same time.
