Hi everyone! I've been on a mini vacation which consisted of many day trips. Packing food is a PITA sometimes! I sooooo wish we could just sometimes order for him at a restaurant.
So here is my recipe. I got the idea from HERE. She does a lot of lunch boxes for her FA son for school. and when i pack for a day trip, i like to make two lunches for DS (just in case he doesn't want the first.. bad habit)
Milk/soy/egg/peanut free (used Ener-g egg replacer and oats milk)
The day before we made pancakes (HeartSmart Bisquick (White Box) pancake mix). We had about 4 pancakes left over so i refrigerated them.
I took 2 cold pancakes, smeared jelly on one pancake and almond butter on the other pancake (sunbutter would work good too!)
put them together and i can't tell you how amazingly delicious this was!!!!!!!!! i ate a pancake sandwich for lunch myself and DH wanted one also (but he didn't get any since he complained about me packing too much -muahhahha)
it's so easy to just freeze your next batch of pancakes and take it out for a pancake sandwich any day! quick and easy and sooo allergy friendly sandwich.

I have been so crazy busy! But I'm working on making my own turkey sausages and corn/rice/quinoa pasta. When I get those perfected I'll be posting like crazy over here!
I did "Italian chicken soup" in the crock pot last night and it was delish!
- 3 cooked chicken breasts cut into bite sized pieces
-1 can garbanzo beans
-1 can petite diced tomatoes
-2 packages of frozen spinich (or 2 cups cooked of fresh stuff)
-2 boxes of chicken stock (we've found a few good GF brands that are really good since I don't get to make my own as often as I used to)
-1-2 cloves of garlic minced
about 1 cup of chopped onion
salt/pepper and oregano to taste
dump it all together and let it simmer all day long. I did baked chicken for dinner on Monday and made the chicken for the soup at the same time. It makes quite a bit- we had it for dinner again tonight and I still have some to freeze.
