Allergen Free "Alfredo Sauce" (contains coconut)

So I couldn't wait for the next recipe exchange to post this because I just made it tonight and was so excited. I was craving alfredo sauce so I decided to make it with what I can eat.

All I did was use light coconut milk (canned), 1 garlic clove (adjust if you make a big batch), rice flour, salt and pepper...SO EASY. I adjusted the amount of the ingredients until it seemed like the "right" consistency and until I thought it tasted good. I mixed it with rice pasta and it was delicious!!

    btw - feel free to post the allergy friendly recipe post... no one in particular is assigned to it.. just who ever remembers on a tuesday (and as you can see, it's hardly on a tuesday lol)

  • I so miss alfredo sauce.  Did the garlic cover up the coconut enough?  I feel like every time I've used coconut milk for something (like whipped cream) I can still taste it.

  • it did! the garlic covered it, and I added a lot of black pepper so it wasn't very coconut-y in the end.
