fast easy dinner that is YUMMMMM ( for you potatoe lovers!)

i have been making this for a while now and it is amazing and i love love love it. just thought id share cause i like seeing new recipes:

Southwestern Skillet

cast iron skillet and cubed hashbrown potatoes ( i use oraida)

1 medium onion

grated sharp chedder

5 to 6 eggs

sourcream and/or salsa for the top

fry the onions and potatoes til brown,kinda flatten it out and crack your eggs on top. place in a 400 degree oven til eggs set

sprinkle cheese on top as soon as you bring it out of the over. put sour cream and salsa on top. (i skip the salsa and use ketchup) but that is just me add some salt and pepper to taste

That sounds reeeeally good. I think I may try that, but I'm thinking I'll add in some sausage. I have been obsessed with sausage and cheddar cheese lately. Mmmmm!

we have done sausage before.. it is good too. i am just all about some potatoes right now!!! it only takes about 15 mins 20 tops!!!
