This was my big craving this weekend so I gave in. DH & I made microwave smores (put the bottom graham cracker, chocolate and marshmallow in the microwave for 10 seconds - take it out and put the top graham cracker on).
Another easy alternative: melt the chocolate in a bowl or double boiler. Smash the crackers into crumbs. Put the marshmallows on sticks and dip into the chocolate, then the crumbs and put them on parchment or wax paper to dry. Simple and DELISH! Only downside is that the marshmallows aren't gooey. But that makes them perfect for the kiddies
I used to work at Disney World when I was 19 (a long time ago) and one of the stores I worked in had Marshmallows on sticks dipped in melted chocolate and rolled in sprinkles or graham cracker crumbs. Once it sets it is the perfect on the go sugary snack. So delicious. It was a dangerous place to work ;-). Oh another one I liked was rice krispie treats covered in rainbow sprinkles. I still do this one today.
