If you use the extract use very little. I always make hot cocoa as normal then drop a peppermint in there. By the time its cool enough for me to drink, the peppermint has desolved.
I make candycane cocoa every christmas. Uses Nestle quick or hot cocoa mix, nonfat dry milk, coffee creamer, powdered sugar and lots of crushed up candycanes. YUM!
I think the easiest way for a single serving of it is to actually make your hot cocoa the way you like and then stir in a few starlight mints or a candycane. No risk in the peppermint being too strong. But I do think a tiny bit of peppermint extract would probably work. Just proceed cautiously. ) Oh! You could also just go to Starbucks and order a pepermint hot cocoa.

I ended up putting about 2-3 drops of peppermint extract in the cocoa. It's really good!! I like the candy cane ideas though too, I'll have to try that.?
