I saw Stacy's recipe for Caprese Lasagna (Actually it is Rachael Ray's, but Stacy linked it.
https://www.rachaelrayshow.com/food/recipes/caprese-lasagna/
I had to try it. I have tons of tomatoes, basil and garlic from the garden. I got a semi good deal on Kraft cheese at Meijer this week ($1.30 for two cup bag) and had to buy the noodles ($1.69 a box... I used half the box). Could have made them to make it cheaper, but didnt' have time. She says that this dish serves 4...those are aweful big servings...I'd say more like 6 servings.
Meijer also has corn on sale for 10 cents an ear this week.
DH and kids loved the lasagna and mowed down the corn. Pretty cheap for good eats. Just wanted to share.
Thanks Stacy for the recipe!
Re: AW: I fed my family for less than 50 cents a serving/plate tonight
How did you like it?
I make some minor tweaks to that recipe but it is a huge hit any time I make it (gisele won't eat it- but she has real issues with 'wet' food blah)
I was thinking of making it for Chase's birthday party- because we have so many tomatoes!
I LOVED it. DH loved it too...and he HAS to have meat for dinner. He didn't complain about not having any meat in it. I can see how adding some chicken would be good too. The kids ate it. My DD was unsure about the "white sauce" at first, but after she tasted it, she said it was good. It is a gormet dish that is super simple. :-)
I haven't tried it reheated, but I can see how it might be even better.
yup- its ridiculously crazy easy to make and super fast. Gisele got a kick out of making it the one day with me- she was like, 'mom why do you always make this? It's just a pattern over and over' (layering the lasagna)
DH is a meat guy too- but this is a recipe he always looks forward to-
Glad it worked out for you guys. Its a really nice and easy summer dish. (great any time- but super easy in the summer- especially with all of the fresh tomatoes and basil)
Definitely going to try this.
Our sweet neighbor has brought us lots of tomatoes from his garden and I feel so bad because I don't really like them just plain.
This looks really good. I think I'm going to try it!
