I'm not quite sure about the difference but I read a lot of reviews of the Sealy Soybean mattress and someone said when you look at the materials it actually only uses about 5% of soybean and the rest of the mattress was other materials. I forgo getting it because I didn't like the feel when I looked at it at BRU. I'm getting the Simmons Kids Soja Dream Haven which is also a soybean foam core mattress for about the same price and I haven't read any negative reviews and it's on the top 5 list from consumer reports. It also doesn't have a yucky plastic outer cover. It's available at Target. Good luck!
