I made a bit pot of black beans for the first time this week b/c I heard so many MoMs say their LOs loved them. So, any recommended recipes, dishes, ways to serve them etc. that your LOs like?
I also don't have kids, but I eat way more than my fair share of black beans. I like black beans with Mexican rice, made into burritos. I also love black bean lasagna (made with tortillas, not noodles). I often stir black beans and salsa into scrambled eggs, and make a fritatta or breakfast burritos. Enjoy!

A couple of my favorite toddler ideas are to mash them up and spread them inside a tortilla, add some cheese and melt it for a quesadilla. They go nuts for them. I've also done a chunky mash of black beans, and combined it with corn. I dumped the mixture into pancake batter and cooked them like regular pancakes. I freeze them, and pull them out as needed, adding some cheese and heating them up in the microwave. You could also make a black bean spread (sort of like a hummus) and use this in sandwiches.

I don't have my babies yet, but I love black beans, and second (or third, or fourth) all the suggestions for quesadillas. What we do is mash up the beans, add any kind of seasoning, add a few veggies if that's the route we're taking, lay out the tortillas on the griddle and let them get a little crispy, then put down a layer of beans and a layer of cheese, cover with the other half of tortilla and flip when the cheese starts to melt. To get a grown-up taste, add red onion and some taco seasoning to the black bean mixture before you put it on the griddle.
We also like black bean burgers (mash up, add onion, add cheese, add an egg and some bread crumbs, form into patties, cook), but those are probably a bit much for the babies at this point.

my daughter, who prefers unhealthy toddler food, will actually eat them plain or with cooked whole grain pasta and has since she started finger foods. weird... but tfg she will so i don't feel like worse mother of the year when she will have pizza rolls for her next meal..
I use them to make black bean burgers.
Also -- I love cooking my own beans and freezing the portions. Way cheaper and better for you than canned beans. I always have them on hand for chili and other recipes.

We are not creative (since dh won't eat beans) so it's mostly rice and beans or stir fried chicken with beans.

also, my SIL who has B/G twins often makes them a quesadilla and puts black beans in to melt with the cheese. they love it!

They would probably be really great as refried beans too.....simmer them with a little chicken stock, add a little taco seasoning and mash up. Yummy!
