I am so tired of eggs and toast in all its various forms. DH isn't into pancakes or french toast (though I am, so some days I will make it for me & DD and make him oatmeal). We need some new ideas. Thanks!
I eat a bowl of greek yogurt topped with almonds, honey and whatever fruit we have. DH makes a big container of granola every weekend and eats that throughout the week. DD eats cereal with fruit, yogurt with fruit, toast and jam or blueberry pancakes.
During the week - Greek yogurt with almonds and dried fruit, steel cut oats with almonds/fruit or peanut butter toast. Occasionally if I have egg whites leftover from making ice cream, I eat scrambled egg whites over toast. On the weekends I almost always make pumpkin or apple pancakes. My DH doesn't really like plain pancakes either, but he really likes pumpkin and apple pancakes.
Thanks, everyone! These are all great ideas and are making me wish it was time for breakfast right now and that I hadn't just gone to the grocery store and bought more eggs and toast for the week. Spiritenergy, I'll definitely check out your breakfast blog posts.
Irish steel cut oats... which are technically porridge (my DH is a food nerd).... they take about 30 mins but they are so tasty... just add brown sugar and any spices... I like nutmeg, cinnamon, cardamom, and ginger but you can switch it up with whatever you like. And they are SOOOOO good for you!
I am lucky, DH eats whatever I make no matter what the meal.
Breakfast is usually yogurt and homemade granola and berries of some sort since I hate cereal, but if there is some small leftover item I might eat that and give him cereal for a change.
With the yogurt we usually have a muffin, toast, french toast, or pancakes.
I also make smoothies, omelets, fried potatoes, sausages, ham, poached eggs or egg sandwichs on bagels with peppers and tomatoes.

we eat cereal (various kinds) every day. Once a month we might eat something else.
But we do have breakfast foods for dinner sometimes.
You could make an egg casserole, overnight monkey bread, crepes.

Here is our breakfast list that we rotate around: I always have coffee no matter what the dish is:
English muffins with ham, cheese and egg
English muffins with peanut butter and jelly
granola with yogurt
cereal:dry or with milk
pancakes
french toast
toast with peanut buter
whole wheat tortilla with peanut butter spread on it and wrapped around a banana
oatmeal with or without fruit and craisins
Egg white omelette with either: vegetarian chili, spinach and mushroom or spinach and cheese
Fiber one bar
