We seem to be in a lunch rut. My guys eat hot dogs and chicken nuggets A LOT. I buy angus, nitrate free hot dogs and the nuggets are as healthy as possible. It's what they want and they do eat it but we need to shake things up!
I can sometimes get them to eat quesadillas. Lunch meats are out for us because of food allergies so I feel really limited.

We eat a lot of pasta for lunch. I make whole wheat noodles with butter and garlic. We also eat a lot of tortellini.
Sometimes we'll have hummus w/ crackers, or guacamole w/ crackers...
My girls won't eat sandwiches, PB&J included, so it's hard finding "quick" lunches to make! I feel like we're kind of in a rut too.
They do LOVE fresh fruit and veggies, so I always include a ton of that with lunch. And sometimes, that's all they'll eat....just cut up fruits and veggies and I'll throw in some cheese for protein.

Lily likes PB&J, grilled cheese (sometimes with tomato soup), leftovers, turkey meatballs (the ones from Trader Joes are the BEST), and deconstructed deli sandwiches (i.e. slices of lunch meat, cheese, and bread with butter on it- but not put together). Lily LOVES eggs, so sometimes I will make her deviled eggs which are her favorite...and sometimes she likes tuna
She eats a lot of fruit, yogurt, apple sauce with her meals. She doesn't like veggies very much right now ::sigh:: but I do offer something at every meal- like carrot sticks, cucumber slices, etc figuring she might eat them one day.
She also eats chicken nuggets, mac and cheese, fish sticks, hot dogs, etc, but I try to limit them to a couple of times a week...and I try to buy ones that don't have a lot of weird crap in them.
Pasta- and homemade turkey meatballs (i make a bunch up and put them in a freezer zippie- pop some out and put them in the toaster oven)
quesidillas always seem to be our easy go to.

I don't buy "kid" food. We eat lunch out with friends once or twice a week (usually at our favorite organic burger place, where I now have to buy each girl their own burger!! When we're at home, I usually make whole wheat quesadillas (literally takes two minutes), or cut up some leftovers from dinner the night before, or we do grilled cheese with cut up fruit and avocado (I don't consider grilled cheese kid food because I love it too, LOL). :-) I buy lunch meat once or twice a month, and when I do, we'll do sandwiches, although my two year old still picks them apart and eats the pieces.
ETA: We do Trader Joe's turkey meatballs pretty often as well.
I actually wrote a lot of you ladies' ideas down! I'm going to make a little calendar or chart of sorts to create a menu for DD, well, more for myself so that when lunch time comes I'm not like: "Okay, what do I make?" while rummaging through cabinets as she impatiently follows me around crying "Eat, eat!"
For those of you who's children enjoy PB&J's that haven't heard of or tried these yet: Might I suggest Smuckers Uncrustables? They come in different varieties (different jelly flavor fillings) with peanut butter, so basically they're a PB&J in a pocket, no crust, and wicked soft bread. Only downside is you gotta thaw them out but it does not take long.. especially with this summer's humidity.
But as far as lunch at my house goes, it's usually:
Mac & Cheese
Grilled Cheese
Ravioli
Lunchable
Ramen Soup with veggies mixed in.
Chicken Nuggets & Unsalted Fries.
^ All served with two sides, the sides are usually fruit, yogurt, chips, or goldfish. Things of that nature.
She's not picky at all so I am forever trying new things, but I have a 4 month old at home so I try to make the best out of quick fixes that aren't bad choices!

My kids eat Quesadillas all the time, last night we had Carnitas so I made Quesadillas with that today. Heres what we ate this week
Grilled Cheese with diced tomato, topped with mashed avocados (we have an avocado tree and I put avocado with almost everything
Mini Burgers with lettuce, tomato, mashed avocado, tatter tots and crinkled carrots on the side, I made the buns and you can buy this handy little tool from Willams Sonoma to make the patties with, it is pricey but mine was a gift,
Chicken Bakes (you can buy them from costco or make your own) with caesar dressing as a dip, if you make your own put peas inside but if not I put them on the side. We also had blueberries with that.
Turkey Sandwich (I cook a turkey and use the meat from that) I used bacon (left over from breakfast), lettuce and tomato and cheese.
Mini Pizzas, You can use english muffins and use sauce and cheese and other toppings as you wish and then put them in the oven to melt the cheese. I make pizza dough in my bread machine and than make my own mini pizzas, I place the dough in the bottom of my large muffin tins and bake them half way on 425 for 10 minutes I pop them out of the tins and then I place sauce and cheese on toppings as needed than I freeze some for later, I defrost them and broil them in till the crust is golden and the cheese is bubbling.
We also had hot pockets and corn chowder one day, the corn chowder was a leftover from dinner a couple nights before...

My kid is a super picky eater. Her lunches (and dinners) are either chicken nuggets, peanut butter and fluff sandwiches, or cheese (American slices or shredded cheddar) with some bread or crackers. A handful of times she's eaten part of a corn dog. Sometimes she'll eat some yogurt on the side.
Her limited diet is frustrating in the extreme but I do what I can. If feeding her cheese all week is what it takes to keep her from being malnourished, that's what I'll do.

A few of our favorites for lunch are tofu nuggets and mac and cheese, grilled ham and cheese sandwiches, and quesadillas with rice. DD loves tofu, so that's my go-to option when she's in a picky mood.
Today I wasn't hungry when it was time for DD to eat, so I heated her up some of the Gerber Graduates pasta pick ups. I thought that would be a quick option since I wasn't making something for two people, but she didn't like them.
