I haven't, but I have made one with a sewing machine and it takes a long time. I'd think by hand wouldn't be hard, but very very time consuming. A blanket might work, four edges; but a quilt has hundreds of edges throughout the material.
I know old ladies who do! It would be very time consuming depending on the size of the quilt and the intricacy of the design. My Mom hand ties her quilts, but uses a machine to piece and bind them.

It all depends on your level of knowledge and how you are going to do it. If you tie it with yarn that can be done in an hour or so depending on the size if you are planning on stitching it then that can take days again depending on size of quilt and the pattern. I have done both types and have been quilting for over 20 years I can have a quilt stitched with a simple pattern in a few days and have the edging on in a day or so if I do a binding.
I've made two with my sewing machine. They were very simple designs and both took awhile I cannot imagine doing it by hand. But I'm sure it would be a fabulous final project.

The H's grandmother handsewed a quilt for our wedding gift. I remember her saying she started it when we got engaged and finished it a week before the wedding. So I'm guessing it is a huge project. It is a lovely quilt.
