Slow cooker recipes

So I posted a couple weeks ago, asking for slow cooker recipes and some of you posted some delish recipes.  Here's the old post with the recipes:  s/o slow cooker recipes

I've made watermellen's bbq chicken (yum) and jnicolen's chili chicken tacos (also yum).  Tonight is zerf's salsa chicken and later this week I'll be trying spitsngiggle's white chicken chili.

DH is a happy camper.  I'm working from home today and he asked what was for dinner.  When I told him I was making salsa chicken, he wrote back "So this is what it's like to ask about dinner and have something cooked and ready to eat.  This is great!"  LOL.

So, does anyone have more slow cooker recipes??  Pretty please?  The easier the better.  TIA.

    I make pulled pork sandwiches with root beer barbecue sauce and it's my husbands favorite.  I put coleslaw on top of the sandwich as well and it's really tasty.  FYI- don't use diet rootbeer.

    1 2-1/2 to3 lb pork sirloin roast
    1/2 teaspoon salt
    1/2 teaspoon pepper
    1 tablespoon cooking oil
    2 medium onions, cut in thin wedges
    1 cup root beer
    2 tablespoons minced garlic
    3 cups root beer ( two 12oz cans or bottles)
    1 cup bottled chili sauce
    1/4 teaspoon root beer concentrate -- optional
    several dashes of hot pepper sauce -- optional

    Trim fat from meat. If necessary, cut roast to fit into crockery cooker. Sprinkle with salt and pepper. In a large skillet, brown meat on all sides in hot oil. Drain. Transfer to a 3-1/2, 4-, or 5-qt. electric crockery cooker. Add onions, the 1 cup root beer, and garlic. Cover; cook on low-heat setting for 8-10 hrs. or on high-heat setting for 4-5 hrs.

    Meanwhile, for sauce, in a med. saucepan combine the 2 cans or bottles or root beer and chili sauce. Bring to a boil; reduce heat. Boil gently, uncovered, stirring occasionally, about 30 min. or until the mixture is reduced to 2 cups. Add root beer concentrate and hot sauce, if desired.

    Transfer roast to a cutting board or serving platter. With a slotted spoon, remove onions from juices and place on serving platter. Discard juices. Using 2 forks, pull meat apart into shreds.

    I do a similar dish with pork loin in Cherry Coke & some cherry wood liquid smoke.  I don't brown the meat first, I just put it in the crockpot, cover with cherry coke, add a few dashes of smoke & some pepper.  At the end of the day, I just shred it with 2 forks & smother with bbq sauce.

  • This is one of MH's favorite.  You can easily sub chicken, beef or tofu out for the pork and it's just as delicious.  It's totally healthy but tastes like really, really good Chinese food.
