Anyone around for this? ... I still need to get on the computer and plan out my meals for the week. We are in desperate need of food but the grocery store I shop at is closed today.
Well I think we'll probably have chicken rollatini, zucchini "crab" cakes, red beans and rice and sausage, pizza, venison steak fajitas and something with pork chops (anyone have a good recipe for pork chops?), oh and I think Ricky is going to make his Bacon wrapped venison loin sometime this week- yum!

That'll take us to Friday - Monday nights DH eats out because I have a riding lesson and leave him home with the kid. They go to the local pub. I just scrounge around the house.

I like to throw mine in the slow cooker with my fav bbq sauce, worchestershire sauce, a little brown sugar, and some Italian salad dressing. I eyeball it so it's a little different each time. Delicious.

I'm not sure what's on my menu for the week. I joined e-mealz and it's been awesome. I'm a really good cook (one of the few things I'll brag about), but with DS being such a high needs baby, and having so much other stuff that requires my attention, I just don't have the time or energy to really cook like I want to, so this works out great. I don't even have to look at the menu before I go to the grocery store, and every meal has taken 30 minutes or less to make and tastes great - plus, I can alter things a little if I want to add my own little flare to it. Totally worth the $5/month, especially considering we have virtually no waste and it saved us $50 on our first weekly grocery trip. It also leaves more time to spend with the family. I'll probably stick with it for a few months, then cancel once I have a few months worth of recipes (they apparently don't repeat them).
Anyway, here's a couple meal ideas that were on last week's menu that were really easy and tasted awesome:
Frittata: Saute some veggies in a non stick pan (or meat if you're into that sort of thing - I used asparagus, mushrooms and green onions), mix a dozen eggs, half a cup of milk, about a cup of cheese (I used Parmesan and feta, but any cheese would probably be fine), salt and pepper, then pour it over the veggies. Let cook on low heat until the eggs have set - it took about 20 minutes for me. I serve mine with some mashed or fried potatoes and some sliced melon. Yummy.
Baked sweet potatoes - wash and wrap potatoes in foil with a little oil. Bake at 400 degrees for about an hour, or until soft. Top with butter, salt, pepper and blue cheese. Sounds gross, tastes great! Serve with a fresh, robust salad.

Wed: Some kind of pork chops w/ carrots & roasted squash
Thurs: Pizza
Fri: Chicken cordon blu (sp?) w/ baked potato & roasted broccoli
