I dunno what were are having but I really want to talk DH into going to the restaurant nearby that serves this amazing Greek platter with pita squares, feta, red onion, meat, tomatoes, olives, and tzatziki sauce. Dear lord its so good!

Don't know what we're having for dinner tonight, but yesterday we had fritatta (with green onions), salad w/ vinaigrette, steamed broccoli, and roasted cauliflower.
Which reminds me... we boiled some beets too and saved them for dinner tonight... so at least we'll be having a side of beet and goat cheese salad with whatever we decide to make!

I think I'm going to make roasted chicken breasts, orzo pasta with tomatoes and feta and then probably broccoli or green beans. I've lost my motivation though, so fist I need to find that!

Baked red snapper and black beans, with salsa and avocado
We have a winner! That sounds amazing!
Yesss!!
It's so easy! Bake fish at 400 for 15-30 minutes, depending on the fish you have. You can use snapper, tilapia, cod, halibut, etc. Just put the fillets in a greased baking dish and cover with salsa, any kind you like. You can also add cheese and crushed tortilla chips. Serve with avocado and sour cream!
We are having pork roast and brussels sprouts. Also I think I am going to make some kale chips. I made them for the first time last night and they were pretty good!
Baked ham, oven roasted potatoes and snap peas All by myself tonight, DH is on night shift. He'll have left overs when he gets home at 8am though... and then we can use the left over ham as lunch meat for next week! I love leftovers!!
