Babies on the Brain

give me your best meatloaf recipe.

I swore I would never attempt to make (or eat) meatloaf because it makes me think of my 81 year old Grandmother AND the "I can't put my arms down" kid from the movie "A Christmas Story". BUT I was talking to someone the other day who said it's basically like eating a huge meatball which actually made it sound pretty enticing.

So, do you have a fave recipe? Care to share?

Re: give me your best meatloaf recipe.

  • I am NAF of meatloaf. I have my mom's recipe at home, but when I make it, I make it for H only and I fix myself a sandwich or something.

  • This shouldn't remind you of your grandmother:

    BBQ Meatloaf:

    • 1 1/2 pounds ground beef
    • 1 cup fresh bread crumbs
    • 1 onion, diced
    • 1 egg, lightly beaten
    • 1 1/2 teaspoons salt
    • 1/2 teaspoon pepper
    • 2 (8-ounce) cans tomato sauce
    • 3 tablespoons vinegar
    • 3 tablespoons brown sugar
    • 2 tablespoons Dijon mustard
    • 2 tablespoons Worcestershire sauce
    • 1/2 cup water, to thin sauce if necessary

    Directions

Preheat oven to 350 degrees F.

Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan. Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick). Pour this sauce over the meatloaf. Bake for 1 hour, basting every 15 minutes with the pan juices.

  • thanks guys! And good call at using ground turkey instead of beef. I will def. have to try it
  • Google Katie joel's meatloaf. It is amazing!
  • I use a recipe similar to fabbate's, but I dice up onions and zucchini and saute them beofre mixing it in with the rest.  You can't really taste them and it's like a secret serving of veggies in the meatloaf (this is also how I sneak extra veggies into Gabe, lol)

  • Dude, you're crazy. I love meat loaf.

Here are some of my favorites:

    Italian Meat Loaf

Asian Style Meat Loaves (I go easy on the hoisin sauce on the top - it's a little too much tang for me)

    Cheesy meat loaf

  • I don't have a recipe, but when I finally do get around to making meatloaf, I plan to do meatloaf cupcakes with mashed potatoes for the icing.
