All of this Jell-o pudding pops talk got me thinking about how my grandma used to get them for us. Last year my cousin had a craving for them and we talked about the memories of us at grandma's house enjoying them on a hot summer day. I've tried a couple of different recipes---nothing is exactly like the real ones, but they are fun and easy to make. I tried mixing a couple of flavors of pudding as well to make the swirl flavor they used to sell. Here is a recipe I used:

I've never actually seen the "new" ones in a store, so I've never tried them. Where are they???
Another thought I had was to make the pudding like I did before, but put it in my ice cream maker before putting it in the pop molds. In hindsight, just freezing pudding probably wasn't the way to go because the ice crystals are going to be too big.
I followed the recipe, but I wonder if it doesn't work as well if you use the instant instead of the cook & serve like they listed in the recipe.
I think your ice cream maker idea is smart.
Ah, another interesting thought. I think I always grab the instant kind.
