If he is still in his infant seat- then I would go with- snap-n-go (OR only an Ergo or carrier if you do that a lot anyway), no car seat base (assuming you can buckle his infant seat into cars easily)- and yay to gate checking car seat.
Have FUN!!! HI sounds like a better summer vacay than our only vacay to MN.
ETA: I just read Julie's response.... Her point about the stroller w/ shade is a great one! She sounds like the expert Hawaii consultant.
I would bring the most comfy stroller with the best shade like Julie mentioned. Don't bring the snap n go if it means keeping him in his carseat in order to push him. Too hot. Skip the carseat base if you know how to easily install without it (we liked our bucket seat best without but your seat may vary).
As for the carseat, I'd keep it with you as long as possible. I would totally try to use it on the plan if possible. It's a long flight and a long time to pass a kid between two people.

When we took Logan to Hawaii we dd the baby equiptmet rental. Just brought the ergo or the plane and everything else we got delivered. Car seat, jogging stroller, box of toys, and high chair. It made traveling really easy.
