I needed something I could throw together for lunch, and it turned out to be surprisingly good. Ugly, but good. Measurements are for one, but you can easily play around.
Whole wheat pasta (1 3 oz serving)
TJs pesto genovese
1/2 c peas (I used leftover cooked peas from last night)
drizzle olive oil
2 cloves garlic, minced
1 Tb pine nuts
parmesan
While pasta is cooking, mix peas with a spoon of pesto in food processor until mostly smooth. Heat a little olive oil in pan over medium, add garlic. When pasta is cooked, toss in garlic and olive oil. Add pea/pesto mix until heated through; dump onto plate. Leaving pan on med, add pine nuts to leftover goo and toast until brown (less than 2 min for me). While pignoli are browning, grate parmesan over pasta. Top with toasted pine nuts.
The whole thing took under fifteen minutes, and it's good enough that I'd feed it to DH (probably have to top with chicken, but still).
