A Week Of Dinner In A Crock Pot

So I follow the crock pot blog, and told DH I wanna try just making crockpot meals for one week.  (Maybe up to 12 days if I can find a nice variety!)

So, on the list is

1. Beer Cheese Soup (if I can find the recipe)

2. Foil Packet Tilapia & Rice

3. Baked Potatoe Soup

Help me come up with non soup ideas!

  • this is totally chili, but its soooo good. i love everything robin miller does. and its a meatless meal :) and, all the other recipes from this episode are crock pot meals too, salmon and chicken! just click the link at the bottom of the page. i've never made them, but i've seriously loved about 95% of the things i've tried that were her idea. i usually tweak them a little, but yummmmmy.

  • I made this last week, and it was super yummy. I just served it with fresh steamed green beans.

    Ham and Potatoes au Gratin

     

    2 full cups diced extra-lean ham

    4 cups diced raw potatoes

    1 cup chopped onion

    3/4 cup shredded reduced-fat Cheddar Cheese

    1 (10 3/4 ounce) can Healthy Request

    Cream of Celery Soup

    1/8 tsp. black pepper

    1 tsp. dried parsley flakes

    1 tsp. prepared yellow mustard

     

    Spray a slow cooker with butter flavored cooking spray.  Combine ham, potatoes and onion. Sprinkle Cheddar cheese  evenly over top. In a small bowl, combine celery soup, black pepper, parsley flakes, and mustard. Add soup mixture to potato mixture. Mix well to combine. Cover and cook on LOW for 8 hours. Mix well before serving.   

     

    Serves 6 (1 cup)   181 calories, 5 gam Fat, 3 gm Fiber   3 Points for 1 Cup

     

  • Guinness Beef Stew.  I don't have a crock pot otherwise I would have already tried this.

  • If you do eat meat, I've done bbq pulled pork in the crock pot.  I get...I think the cut is called boneless bbq spareribs?  It's like a long strip that's cut into slices that mimic ribs but I'm not sure exactly where the meat comes from (location-wise since it's obviously not actually ribs).  But I sear them on the stove and toss them into the crock pot with bbq sauce and some water to cover them and the cook them covered till they're just about falling apart so nice and tender.  We usually eat them whole for dinner with potatoes and a veg then pull the leftovers for sandwiches!

  • I was going to post the easiest, yummiest chicken recipe and now I can't find it and it is making me batty!  Arg! If you get stumped, check your library for slow cooker cookbooks. That is where I found a ton of ideas.
  • I made the best ham on Monday night. 1 pork shoulder, put in the crock pot, pour 1 2 liter bottle of 7 up over it, add about a cup of brown sugar. Leave on low for 5-6 hours.

    It's not a full meal in a crockpot, but you could easily throw some oven fries in to complete the meal....unless you want to use nothing but the crockpot, then I guess this doesn't help.

    Stuffed Pasta Shells with Mushroom Sauce


    8 oz. mushrooms, sliced

    2 tsp. olive oil

    2 soy-sausage patties (or regular breakfast sausage)

    1 can (28 oz.) plum tomatoes, cut-up

    1 can (6 oz.) low-sodium tomato paste

    1/2 tsp. dried oregano

    1/2 tsp. garlic powder

    1/2 cup dry white wine

    1 pkg. (20 oz.) low-fat cheese stuffed pasta shells

    Snipped fresh Italian parsley, for garnish


    Saut? the mushrooms in oil in a nonstick skillet, until golden, about 5 min.  Transfer them to the crockery pot.  In the same skillet, cook the sausage patties for 6 min. Remove them from the skillet, and cut them into 1/4" cubes. Place the pcs. in the crockery pot.  Stir in the tomatoes, tomato paste, oregano, garlic, and wine. Cover and cook on high for 3 1/2-5 hrs.  Add the shells to the sauce, making certain to cover them with sauce. Cover and cook until the shells are thoroughly hot, about 1 hr. Garnish with the parsley.

     

    Basil Chicken

    4 whole skinless chicken breasts

    1/2 teaspoon pepper

    1/2 teaspoon basil

    1 can cream of celery soup

    1/2 whole green pepper -- sliced

     

    Place chicken breasts in slow cooker. Sprinkle with pepper and basil.  Spread soup on top of chicken. Arrange slices of green pepper on top of soup. Cover and cook on low 6 to 8 hours.

  • I don't have measurements, but you can dice sweet potatoes, russet potatoes, carrots, other root veggies you have and like, chicken (white or dark meat), and toss them in with either apple juice (or chicken broth or white wine), and spices (think cinnamon, nutmeg, mace, allspice, etc), and cook on low for 6-9 hrs, then serve the chicken over the veggies.

    The chicken taco filling someone already recommended is great, and DH cannot get enough of the pulled pork another person mentioned.  That one is fun because you can play with flavors of sauce--raspberry chipotle made into sandwiches with whole grain bread is one I liked, but apparently that made it "girly pork."

    is very similar to a recipe that's currently living at DH's place, but is really really good, and you can add mushrooms to make it even better.  I'd make the sauce in a separate pot, though, I can never get it to work in the crock pot.

    https://www.crock-pot.com/recipedetail.aspx?recipeid=1424 is also good, especially if you use white wine instead of the chicken stock and apple cider instead of juice.  It also works well with fresh thyme and dried rosemary.

     I wish I knew how to save this post, there are so many ideas I want to try!
