What would you serve for this?

We are having some family over on Monday morning for a casual get together to celebrate some birthdays...just IL's, its nothing fancy.  Everyone is coming over around 10AM so I need an easy brunch idea.  SIL is bringing some type of roll or bun.  I'll have cupcakes for later, but I need some type of light dish.  Kid friendly would be a plus.  Any ideas?

  • I'd make some kind of egg casserole and fruit. Maybe home fries or hash browns too.
  • One of those breakfast casseroles or quiches (my kids will eat it if we call it "egg pie")?  And a fruit salad or waldorf salad?

    I make chicken salad (w/walnuts & grapes & a little curry thrown in) and spoon it into those mini filo dough cups sometimes, those go over well.

  • DH's family always has strata (baked egg dish with cheese, bread and ham) and it always goes really well and my kids love it!

  • Thanks for all the ideas...I will look into strata for sure.  Kori, the chicken salad in mini cups sounds awesome would you mind sharing the recipe you use?  I've actually never made chicken salad before. 
  • Well, you could take the easy way & buy some premade, cut some grapes in half & throw them in w/some walnuts ;-)  

    I never use recipes, I made it up but the basic idea is -

    2 chicken breasts, cut into small cubes.  Sometimes I put them in a skillet with a minced garlic clove & abt a teaspoon of curry powder to give it more flavor.  Splash of olive oil if it's too dry.

    Mix chicken with mayo, 1/4tsp curry powder, some chopped walnuts, halved grapes, usually about 1/4 tsp mustard.  You can throw celery in, chopped chives or green onions, etc.

  • I like the chicken salad idea in the phyllo cups and quiche is always a good one.

    For DS2's baptism, I made mini quiches using phyllo dough shells (in the freezer section).  I made a few different kinds (egg/bacon/cheddar, egg/spinach/mozzarella, egg/broccoli/cheddar).  They were super easy and people ate the heck out of them.

    You could make a hashbrown casserole, do a fruit salad, fruit kabobs, some sort of pastry.

  • oops, phyllo.  I'm a bit tired, sorry.
  • French toast bake is always yummy, and my kids love it.  Pioneer Woman has a good one, I add in blueberries.  And the bonus is you can make it the night before.
