The violet is basically 'sweet' with a creeper light floral taste. It will probably be good with stuff like plain buttered scones or something. Definitely pretty.
The dandelion is made with petals only-- no green at all. The green parts are bitter. Same concept as the violet. It's 2 cups of petals infused overnight in 2 cups boiling water. Then make jelly with it. You can use mint, lemon balm, etc.

One of my college buddies makes dandelion wine with his bumper crop. He's got 5 acres of land, so he just lets it go for a while until he has enough winemaking material.
