Being a SAHM with an infant I'm having a difficult time finding things to eat for lunch for just me. I don't want to cook up a big meal and I'm tired of sandwiches. Any suggestions?
I just eat cheese and crackers, fruit, a bowl of cereal, yogurt, leftovers from the night before, or whatever else I can get my hands on and eat quickly with relatively little mess.
The Nest/Bump sucks and won't let me change my location. I'm in Arkansas, not Florida.
I've made this a few times in the last week, and it's healthy, super quick, and yummy.
Spray a pan with olive oil or canola oil, place a whole wheat tortilla in it, layer with shredded cheese, some shredded rotisserie chicken, spinach (optional), then place a second tortilla on top and cook it like a grilled cheese on medium heat. Flip it after about 2-3 minutes, put the cover on the pan, and cook for another 2-3 minutes or so. I cut it into four triangles, and dip them in salsa.
