Need ideas for brunch and potluck

Thursday I am going to a potluck where the hostess is making indian style chicken.  Anyone have a favorite side dish?  I believe she's doing some rice too but is there a veggie dish that would go well?  And not be too spicy so my family can eat it too?

And Friday I am hosting a brunch.  I think I'm going to do french toast and deviled eggs because I love my recipes for those.  I'm at a loss for other stuff though.  Any other ideas? It should be a small group but i want to make as much stuff Thursday as I can (like the deviled eggs).  Thanks!

    For the brunch I'd do fruit salad and some kind of frittata too.  Maybe something like a quinoa or brown rice salad too?

    I like the fruit salad idea (was already debating that), but don't want more eggs...I am hoping for a veggie-type option...I would do asparagus but while it's on sale it's not as cheap as I'd like.

    for the brunch....asparagus sounds great and if you check your local farm it is currently in season and cheapier then the grocery store..not sure where you live but in new england it is..what about whole roasted peeled potatoes with some butter and herbs..I think its good to have some "lunch type options"..homemade mac and cheese? or a white vege lasagna? some nice baked fruit bread or muffins (pumpkin banana blueberry) sorry if this is not helpful.. GL

    BTW CJP, I made an asparagus gruyere tart the other night for dinner.  It was literally a sheet of puff pastry, shredded gruyere, and asparagus brushed with a little olive oil and salt and pepper and it was a bit of a show stopper.  Google Martha Stewart and "asparagus gruyere tart".  Not the cheapest option, but awesome.

  • Thanks ladies. I can't do the asparagus tart for this because of the $ but will do it for dinner sometime! As for farms, we are in the desert, so it isn't an option for us. I wish! If only a few people come I could do some of my fave asparagus. We will see! I definitely want more lunch options. Let me know if you think of more!
