I have an old wool sweater that is made out of angora and one other type of wool (I dont remember off the top of my head). I would like to make a pair of longies and maybe a soaker out of it. It is white and I am not sure how well white will work as a poo catcher. Can I dye this? What type of dye works best? If I leave it white, will it turn yellow as she pees / poops? It is super soft and we are not worried about heat issues as we are in Alaska, and evenings still get a little chilly.

According to the woollybottoms website, it needs to be less than 30% angora or it's too hairy. Not sure about your %ages.
You can dye wool/angora blends. I'm sure a quick google search would give you a good method, like this:
