I'm sharing this only because I fear for my life...
This is my grandma's recipe!
You can use either 7 pounds of large cucumbers or apples for this recipe. To use the cucs, core & lime according to the container's directions.
DAY 1:
1. Bring 1 c. white vinegar & 2 tsps Alum to a boil. Remove from heat. Add apples and enough water to cover the apples. (cucs should be simmered for 2 hours in the vineger, alum, water mix-DON'T simmer apples)
2. drain and discard.
3. Make syrup from 2 cups white vinegar, 2 cups water, 10 cups sugar, 1 cup red hots, & 8 cinnamon sticks. Cook until candy disolves.
4. Pour hot syrup over rings and let sit over night.
DAY 2:
drain the syrup into a pot and return to a boil. Pour back over apples, cover and let sit over night.
DAY 3 & 4:
Repeat day 2
DAY 5:
Repeat day 2, except while syrup is returning to a boil, pack apples (or cucs) into canning jars. Pour hot syrup over the rings leaving 1/2 in headspace. Lid & ring, and process 10 minutes in water bathe.
The long process may seem daunting, but the rings are completely worth it! People go crazy over these!
