Love the name, love the spelling. But my family is French - hence the French spelling of my daughter Vivienne's name. I don't think it makes it any harder to pronounce, and it's not like it's just a made up spelling to be different. It's an ethnic thing. It was one of my favorite names, but it sounds cheesy with our last name, so we had to ditch it.

Stick with Lucy.
It's an adorable name, by the way. Very feminine but punchy. I like it.

I would just spell it Lucy unless there was a really compelling reason to do otherwise.
