DS has a rapidly growing appetite and is already up to 3 meals a day with solids. We've been doing mostly purees but, since I make his food at home, some of his food is pretty thick. He's not picky at all but because of medical issues we can't give him any dairy, meat, or other high-protein foods. I can buy him some low-protein bread and pasta, and I can make him some low-protein pancakes or muffins... But can he eat that stuff when he doesn't have teeth yet? How do I transition to bigger, chunkier, non-pureed food? I'm terrified of choking.

DS only has his bottom front two teeth (just cut one of his uppers earlier this week). He does fine with more solid foods. He gets chunks of bananas, avocado, puffs and carrots. He just mashes them with his gums and swallows. He loves feeding himself.
I wouldn't worry too much. Maybe start with some of those puffs, since they easily dissolve. They can't really chew until they have molars, anyhow. Just give him stuff that's mashable enough that he can gum it to death.
Next week we are going to start on some whole wheat pasta, bread and pancakes. At 8 months I plan to introduce meats and egg.
My son doesn't have teeth yet either. I have slowly began adding non-pureed foods to his diet. I started with chunkier peas. I steamed them, and instead of using the food processor, I just mashed them with a fork. He did gag the first couple of times, but is doing much better with it. I then moved on to very soft cooked veggies (like, overcooked). Try carrots, sweet potatoes, and green beans. I make sure that they are "pea" size.
Word of advice though, I started putting several pieces onto his high chair tray and he would try to put all of them in his mouth at once. So, now I have to put one or two on his tray at a time. He is learning (slowly) that he has to chew and swallow first before taking another bite.
Just be confident with your "baby Heimlich" skills. Your LO should be fine. He will probably gag a few times, and that is scary too. You gotta let him learn though.
