I've mentioned before that cooking made me nauseous, which is a real shame because I love cooking. However, today I decided that I wanted to cook! Now, I didn't make anything fancy....but I cannot wait to eat it! It's a penne lasagna (sub penne noodles for lasagna noodles). It's super easy to make!
1 lb of ground beef
1/2 lb of penne noodles
1 tub of ricotta cheese
16 oz mozzarella cheese
1 egg
1 jar of tomato sauce
seasonings to taste.
1. Cook the noodles to al dente (I used brown rice noodles to make it a bit healthier)
2. Brown the ground beef with seasonings (I just used a little Italian seasoning), add the tomato sauce and set aside.
3. Mix the cheeses and egg together.
4. Layer the noodles, tomato sauce, cheese mix, noodles, tomato sauce, cheese mix, and top with tomato sauce. (I used a 1/2 casserole dish for this)
5. Cook at 350 for 40 minutes, or until bubbly!
I cannot wait to eat this! Hopefully the baby still wants it in 25 minutes!
