My husband is away for the next 7 days and I'm trying to figure out how to occupy my time... I'm thinking baking is a good way to do it. I'd like to make some oatmeal cookies to freeze now for after our little guy comes (I hear it helps with keeping up your milk supply), but I've never made oatmeal cookies before.
Please share your recipes! Thanks!!

Re: Oatmeal Cookie Recipes - please share!
I got this recipe from Reader's Digest Best of edition a few years ago. They are actually oatmeal chocholate chip but they are so good -
MOM'S ULTIMATE
1 cup soft butter
1 cup brown sugar
1 tsp. baking soda
1/4 cup boiling water
1 tsp vanilla
1-1/4 cups flour
1/2 tsp. salt
2 cups quick oats
12 oz. semi-sweet chocolate chips
Cream butter and sugar together. Dissolve the baking soda in the boiling water and stir into butter/sugar mixture. Add vanilla, then dry ingredients and chocolate chips. Drop small balls onto ungreased cookie sheet. Bake 10-12 minutes at 350 degrees.
