Easy and delicious dinner to bring friend w/ new baby?

My friend just had her third baby.  I want to bring over a dinner for her, but I am low on energy since I am pregnant myself and taking care of two little boys.  When she had her second, I brought her lasagna and she brought me spaghetti with meatballs when I had mine, so anything other than those two dishes would be great.  Anyone have easy fool-proof recipes to share?

  • I make these, freeze them and give them to my new mom friends all the time. I almost always have 1-2 trays of them in my freezer for nights when I don't want to cook. Easy and delicious!

  • One of my neighbors arranged some ladies from our moms' group to bring us meals.  One of our favorites was roast beef, mashed potatoes, gravy, some brown 'n serve rolls and a bag of steamer veggies.  It was so yummy and hearty and my "meat & potatoes" family loved it.  Plus, it reheated really well.  The roast would be easy to just throw in the crock pot and you could make garlic mashed potatoes and leave the skins on red potatoes when you boil them to avoid having to put too much work into them.

    no offense, but that picture just made me throw up a little.  I hope it tastes better than it looks.

    I would bring a chicken & brocolli casserole with cheese/breadcrumb topping OR a chicken/creamcheese/cranberry braid.

  • I love to make PW's lasagna.  When I make it, I usually make some extra noodles and use the pan that is more like 8x11, instead of the 9x13.  Then, I get a disposable lasagna pan and freeze that  one.  You can stretch the meat sauce and cheese layers into those 2 smaller pans.  So, you could let them heat one up for dinner and tell them to freeze the other pan for another meal.  You could also bring over some garlic bread and a bag of salad.
  • We just brought food to my husband's brother because they just had a baby.  I brought chicken salad that I made with apple chunks, grape halves, and celery and tortellini salad with tomatoes and cucumbers and a basil vinaigrette.  They really liked it, as far as I know!  I like to pack whatever food I bring in disposable containers so that they don't have to bring anything back to me...I put the salads in gallon size freezer bags.  I also brought mac and cheese already frozen and ready to be baked, and some vegetable soup that I had made, also frozen, so that they could just pull it out whenever.  With the soup, I cooked it with no pasta, then froze all of the veggies/beans/etc. in a container with very little liquid.  I brought them a box of stock and a baggie of pasta to cook up and add to the veggies, because I don't like how pasta freezes in soup.  I've also brought a friend everything for tacos, ready to go, in baggies, and they really liked that.
