I just made an apple cinnamon pork chop recipe..SO GOOD.
First you need: 3-4 boneless chops, 1 T butter, in a skillet on med heat turn every 4-5 mins until cooked.. put on low.
In a sm. bowl mix: 6 T brown sugar, 1.5 t cinnamon, 1 t nutmeg, 1/4 t salt. Then thinly slice 3-4 apples (I used 2 red, and 1 granny smith)
In another skillet, melt 1 T butter, add the mix from the bowl and the sliced apples, keep turning them, cook on med. heat. The mix will turn into a syrup.
Top chops with warm apple mixture and enjoy. If you have left over apple mix you can use it on waffles or pancakes..

I don't know how healthy it is because I use mayo but lately I've been making a chicken curry salad. No real recipe, but here is what I do:
Boil the chicken - once it's done I shred it with two forks
Cut up grapes or apples (depending on what I have)
Add some onion and celery.
Cilantro if we have it.
Mix Mayo so it sticks together and to your taste. Then I add Curry powder to taste (more or less depending on what you like).
I eat it plain or on toast...my husband loves it too. We had it for dinner last night.
