That sounds really good. I have never had them before.

What?  Really?  I eat anything and everything with BBQ sauce.  My favorite are smiley fries (they are french fries in the shape of smiley faces) dipped in BBQ sauce mixed with Ranch dressing.  This was my college drunk food staple.

  • It sounds and looks long, but it's really easy, and they are super yummy!

    2# ground beef

1/2 medium yellow onion fine chopped

1 slice white bread, crust removed, torn to small pieces

    3 cloves garlic fine chopped

    1 large egg

1/4 cup fresh flat leaf parsley, chopped

    2 Tbsp olive oil

    1.5 tsp Italian seasoning

    1.5 tsp salt

    3/4 cup grated Parmesan

    1.5 tsp pepper

    3/4 cup ricotta cheese

Combine beef, onion, bread, garlic, egg, parsley, oil, Italian seasoning, salt, 1/2 cup Parmesan and 1 tsp of the pepper,  Shape into 16 meatballs (about 1/3 cup each).  Place on baking sheet.  Bake at 400 F for 25 minutes.  In separate bowl, combine the ricotta, remaining Parmesan and remaining pepper.  Remove meatballs from oven and turn on broiler.  Spoon a few teaspoons of ricotta mixture on top of each ball.  Broil till ricotta browns, 3 - 5 minutes.
