This was so so good. You could make it spicy if you wanted - the ingredients it calls for aren't spicy at all. I just served it in tortillas, but it would be amazing over rice with beans and corn. It would also be a fantastic enchilada filling!
I couldn't believe how easy it was to shred the chicken at the end. I had mine on low for 8 hours, and then on warm for three hours (long work day!) and it was absolutely perfect. Even Ella liked it! Monterey Chicken FTW!

That does sound good! I just bookmarked a couple other recipes from that site too. Now if only I could use my slow cooker without burning everything...
