recipe RAVE: Monterey Chicken in slow cooker

This was so so good. You could make it spicy if you wanted - the ingredients it calls for aren't spicy at all. I just served it in tortillas, but it would be amazing over rice with beans and corn. It would also be a fantastic enchilada filling!

I couldn't believe how easy it was to shred the chicken at the end. I had mine on low for 8 hours, and then on warm for three hours (long work day!) and it was absolutely perfect. Even Ella liked it! Monterey Chicken FTW!

that sounds delicous! It's similar to our recipe for pork tacos - pork shoulder in the crockpot with salsa, oregano, cumin, cocoa. I like the garlic in your recipe though. I need to add this blog to my reader.

That does sound good!  I just bookmarked a couple other recipes from that site too. Now if only I could use my slow cooker without burning everything...

I started a batch this morning.  I added some bacon since Monterey Chicken is fave entree at Chili's and it has bacon :-)
