Are they made with butter or shortening? If I remember correctly, shortening tends to make them chewier. Sometimes if a recipe calls for just butter, I do 1/2 butter and 1/2 shortening (like butter flavored Crisco).
It's due to mulitple reasons- use shortening in place of butter, cooking temp, cooking time and batter temperature.
I usually cook my CC cookies (dough that has been in the fridge for at least 24 hours rolled into balls) at about 325 on parchment paper and take them out when they loook almost done.
Replace about 1/4 cup sugar with molasses, depending on the receipe. They will be chewy.
And/or use dark brown sugar which has a higher molasses content. Also, underbake your cookies - they always cook a little while they're cooling on the pan but if you cook them too long, they will be crispy.

try using half butter and half butter flavor crisco..I think real butter makes it crispy, but the butter flavor crisco keeps them chewy...
or try taking them out a minute earlier.
