Looking for some dinner recipes...I think we have now tried all of the "main course" selection at pioneerwoman.com. They are delish..but not always very healthy or kid friendly!

Not sure how healthy mine are. I gave this recipe in another post, but I love bbq pulled chicken in the slowcooker. It's easy and yummy. Basicially, you taken a package of frozen chicken breast, and add a half a bottle of bbq sauce. Slowcook on high for 4 hours. I usually make a veggie, like peas, as well as baked beans to go with it. After the chicken is done, I can usually throw dinner together in about 15 minutes.

I made a simple pot roast yesterday, salt and pepper a bottom round roast and sear it on all sides. Plop it in the crockpot with a can of cream mushroom soup, packet of onion soup and a bay leaf (which I just now realized I forgot yesterday, damn) and a can of beer. Cook on low all day (varies with size of meat). I serve it over egg noodles. I also thicken up the gravy with some wondra flour when its all done.

Crockpot enchilada casserole
Kufta and rice
Creamy taco mac
Skillet beef stroganoff
Chicken fajita bowls
Slowcooker pulled chicken
California club chicken burgers
Red chile chicken and rice with black beans

I usually cook three times during the week. Monday, Thursday, and Sunday. The Monday and Thursday meals we eat leftovers, and Sunday is our "family dinner" night (DH works nights, but he has Sundays off), and that's usually something that doesn't hold over.
I like to make:
traditional red beans & rice, crock pot lasagna, tortilla soup, taco casserole, "Italian" chicken crock pot casserole (chicken thighs, tomatoes, green peppers, onions, served over rice or egg noodles).
Here's one of our favorites:
1:1 ratio of chicken breasts to "cream of" soups (ie: 3 chicken breasts, 1 can of cream of chicken soup, 1 can of cream of celery soup, and 1 can of cream of mushroom soup). You can add in whatever veggie you want also--peas, broccoli...
Put chicken breasts in crock pot (you can put 'em in frozen if you want).
Add in your vegetable of choice (you can put those in frozen too).
Spoon the soups over the top, but do not mix it all up--just layer on the soup.
Sprinkle with a generous helping of grated Parmesan cheese. Again...don't mix.
Cook on low for 7-8 hours or on high for 4-5 hours.
Serve over egg noodles or rice.
Tonight I had school until 6 so we just did grilled cheese and soup (LO loves soup!)

Weds- Lasagna and salad
Thurs- Teriyaki chicken, mashed potatoes, and a veggie
Fri- Burgers

I work FT so I make a lot of stuff on weekends that can be frozen & easily defrosted & heated up after work. I don't cook our dinner until after they are in bed b/c MH doesnt get home until close to their bedtime & they go to bed around 7. Here are some faves for the kids (right now...they could reject them tomorrow of course):
Cheesy turkey meatloaf bites (weelicious)
Pizza (I blend a carrot & red pepper up & mix it w/ my sauce recipe to add veggies to it), using refrigerator dough (I have tried WW but it seems to be too chewy for the kids, they dont like it much), homemade sauce & that 4 cheese shredded blend from sargento
Broccoli nugget things from wholesomebabyfood
spinach ricotta bites from weelicious
Get a rotisserie chicken & serve it plain or mixed up w/ other random stuff we have around. Lasts a couple days, which I like.
Meatballs & pasta
Asparagus risotto (make basic chicken broth & arborio rice risotto & add asparagus puree as well as chopped cooked asparagus & parmesan cheese)
I used to also do the vegwee burgers from weelicious, haven't made those in awhile.
On weekends, for lunch I often do grilled cheese or scrambled eggs with chopped spinach & cheese.
We struggle w/ veggies, my kids won't eat many of them plain so I mix them into most things I'm making.
