Toddlers: 12 - 24 Months

post your 'all in one' meals (protein, grain, veggie all in one easy meal...)

I need to start doing this more b/c we're really struggling w/ the veggies & pickiness factors...

Things I have done/thought of:

mac & cheese w/ meat/veggies,

baked pastas w/ red sauce, meat/veggie (baked ziti, lasagna etc),

chili,

the chicken/rice/veggie/cream of mushroom soup type casseroles,

pizza w/ veggies mixed/blended into the sauce or on top

What else do you make & LOs love? (esp if they're somewhat picky!)

  • My girls love American chop suey. I make it with ground turkey and whole wheat noodles.  It's quick and easy. 

    I'm going to make chicken pot pie next week--hoping they'll like that too!

    AH! thank you for reminding me- we love the spinach ricotta bites around here too (I actually really like them as well) and I haven't made them in awhile! 

  • Chicken pot pie pockets!  It's a Rachael Ray recipe that my friend found and they turned out so good!  Let me know if you want the recipe.

    Shepards pie is another good one.  I'm making it tonight actually.  I make mine with ground beef, carrots, parsnips, onion & peas with rosemary and thyme on the bottom, then a layer of garlic mashed potatoes, then a layer of shredded cheese, and then I do drop biscuits on top.  Bake according to biscuit directions and it's done!  So good!

  • I throw a few chicken breast in a crockpot with salsa verde and a bunch tomatoes, add some cumin and garlic (maybe some green pepper too) cook on high for 4 hours shred and serve over brown rice.

    It is DS favorite food these days.

  • Homemade turkey chili in the slow cooker (non spicy of course for Lo) Its so good. Over brown rice.

    1lb ground turkey, a medium onion (diced), a green pepper(diced), I sm can diced tomatoes(drained), 1 lg can tomatoe sauce, 1 lg can kidney beans (drained and rinsed), I sm can black beans (drained and rinsed), 1/2 tbs garlic powder, 1/2 tbs cumin (optional) black pepper to tast.

    I brown the turkey with one tbs olive oil with the onions and peppers on the stove then drain.  Then just add eveything to the slow cooker. 4 hrs on high or 8 on low! Its so easy and good. And when its cooking (almost done) I make the rice. Both my boys love it! When its done I will spice up DH and I's with a little chili powder or hot sauce, because we like a little spice!

                                                                                                

     

  • DD really likes the pot roast in the crockpot. i throw in some carrots and potatoes and then make a side of peas. I also make meatloaf and chop up some green peppers and onions to add to the meat mixture. DH makes some killer stuffed bell peppers (we use red peppers intead of green) and add bread crumbs, chopped bell peppers and onions. He sticks it under the broiler to melt some parm cheese on the top. It's nice and colorful and SOOO good!

  • Oh, and we also eat lots of fajitas or tacos. We add black beans and various onions and peppers and corn to the combo. DD loves it (especially the black beans and corn!).

  • I love all in one meals - I really don't like plain veggies myself, so it's good for me too :)

    Here are a few of my faves that my baby has loved too:

    Crockpot Lentil Veggie Stew

    Chicken and orzo w/ tomatoes and broccoli

    Rotini with cheese and collard greens (no protein other than the cheese but you could add chicken)

    Chili of many varieties, this one was a recent fave

    I love the black bean/squash combo, so these burritos were great.

    We also do a lot of curries and mexican dishes. Pretty much if it has cheese or black beans or some sort of creaminess, my baby will eat it happily.

  • Black beans and brown rice with tomato and mozarella salad.
  • All three of my kids love baked potato soup.  I add shredded carrots for extra veggies.  They also love shepherd's pie a lot and you can get all food groups in there except dairy.

    Beef Stew

    Chicken Noodle soup

    Cassarole with Chicken, Stuffing, summer squash or broccoli

    Chicken Quesadillas with Sauted veggies in it

     Those are all my kids favorites!
