Day trips I've taken have been to Mt Rainier, Mt St Helens, Leavenworth, and Deception Pass/Bridge area. If you could stay overnight one of the nights, maybe it would be worth driving to the coast (?).
I'm not sure how long it would take, but maybe something like the Dungeness Spit area (you could also do the Olympic Game Farm), or just take a ferry somewhere, hang out for the day, and come home.

if the weather is nice, we love tooling around on Bainbridge Island. The diner in Winslow is fantastic, and I highly recommend checking out the Bloedel Reserve.
Locally - we love hanging out on Whidbey: Whidbey Island Winery, Greenbank Farm (antiques, wine, pies)...Langley is a great little town too. I really want to stay here for a weekend. Great little chocolaterie - and my husband loves the Star Store for clothes surprisingly...
Re: DH bday weekend. Ideas on day trips?
